TRACHONAS OLIVE GROVE
The Trachonas Olive Grove consists of Kalamata olives and Koroneiki olives. Both olives are used for the production of extra virgin olive oil. The oil is not mixed. It is offered as Kalamata Extra Virgin Olive oil and Koroneiki Extra Virgin Olive oil separately.
The Kalamata olive oil has a fruity taste. It is harvested much earlier than the Koroneiki. It is harvested in November. The olives are medium to large size, with pointed ends. The colour of the olives is redish-to black. The ratio between Kalamata olives and olive oil is very poor and hence in combination with the excellent aroma and fruity taste this olive oil is scarce and sold more expensive than the Koroneiki.
The Koroneiki olive is an olive that is specifically grown for the production of olive oil. The olive is small and round and has a high oil content. The olive oil produced from the Koroneiki has a nice smooth aroma and strong slightly bitter taste. The Koroneiki olives are harvested at a later stage - usually January - February.
Natural hand made olive oil soap is also produced from the Estate's Olive oil. It is an all natural ingredients, handmade soap that is left for maturity at least 5 weeks. There are no added colours or aromas. .

COLLECTING OLIVES
The harvest season starts in November and ends in February. It is utmost important to avoid as much as possible the scratching of the olive skin as then oxidation starts.
The collection of the day is taken in the evening to the olive mill and processed at once. Olives that are harvested and processed in the olive mill the next day produces olive oil with some acidity.
